			<description>&lt;p&gt;Don Vito's Old World Classics--Artichoke Marinara Sauce  (Local Baltimore Family Business) You can get it at Victoria's Fancy Foods if you live in&lt;/p&gt;&lt;p&gt;the Annapolis area...other shops check their website..&lt;/p&gt;&lt;p&gt;1 or 2 Eggplant&lt;/p&gt;&lt;p&gt;2 eggs  slightly beaten (used to coat the eggplant slices)&lt;/p&gt;&lt;p&gt;Italian flavored bread crumbs (enough to coat slices of eggplant)&lt;/p&gt;&lt;p&gt;olive oil&lt;/p&gt;&lt;p&gt;Lots of garlic--I used the jarred minced version&lt;/p&gt;&lt;p&gt;Salt and Pepper to taste.&lt;/p&gt;&lt;p&gt;Lots of Mozzarella  Cheese (shredded)&lt;/p&gt;&lt;p&gt;Lots of Parmesan&lt;/p&gt;&lt;p&gt;Lots of Provolone cheese&lt;/p&gt;&lt;p&gt;One jar of Don Vito's Artichoke Marinara Sauce&lt;/p&gt;&lt;p&gt;One large skillet&lt;/p&gt;&lt;p&gt;Casserole dish&lt;/p&gt;&lt;p&gt;I love this sauce--and everyone seems to love this dish!  It's not low calorie--but delicious!&lt;/p&gt;&lt;p&gt;Here's what to do:&lt;/p&gt;&lt;p&gt;Cut the skin off the eggplant cut into thin circles.&lt;/p&gt;&lt;p&gt;Dip in egg and salt and pepper..&lt;/p&gt;&lt;p&gt;Coat with bread crumbs&lt;/p&gt;&lt;p&gt;In heated skillet add olive oil and minced garlic-1 Tablespoon, stirred...&lt;/p&gt;&lt;p&gt;Add the eggplant to sautee until tender  add more olive oil if it gets dry and more garlic if needed.. I love garlic...&lt;/p&gt;&lt;p&gt;Then in casserole dish place sauce in bottom then layer the sauteed egg plant slices, then add parmesan and mozzarella cheese -just layer&lt;/p&gt;&lt;p&gt;it on top of the eggplant.  Then layer eggplant and then sauce then cheese---just like lasagna--&lt;/p&gt;&lt;p&gt;End with sauce Top with Provolone Cheese.&lt;/p&gt;&lt;p&gt;Bake @ 350 until everything is melted through- about 45 minutes-Serve with Bread and your favorite wine..&lt;/p&gt;&lt;p&gt;You will love this--Let me know what you think.....&lt;/p&gt;</description>
